So the other night when we were doing some post Christmas returns/exchanges that took far far too long, I knew that I was going to need to whip up something quick for dinner for the fam. I remembered seeing a recipe for a black bean soup on my fellow dietitian-friend MaryRoss's blog that looked simple and good so I went for it. Now as it turns out, this soup wasn't just simple to put together and good, it was quick and really delicious, the whole family loved it! My Father In-Law, a soup connoisseur of sorts, had some of the leftover soup and has already put in a request for a second batch.

I made the soup just as MaryRoss suggested but threw in an extra can of black beans as we are one black bean-eating family. The spices that I chose to add were 2 teaspoons of cumin, 1/2 Tablespoon of chili powder, 1 teaspoon Mexican oregano (regular oregano would do too) and I threw in one bunch finely chopped cilantro. We topped it with some avocado and gobbled it up!
