Chopped Thai Salad - My Most Favorite Salad of All

Salads are something that I really like to eat... when someone else makes them.

When I am whipping up a salad at home to have with dinner or lunch, it is often a pitiful example of a salad, a mere suggestion of what a salad should be really. It is sometimes made of some mixed greens or romaine, with some tomatoes and if I'm feeling feisty, a few sliced cucumbers or bell pepper. But if I'm being honest, it is usually just mixed greens, no toppings.

I know, they should take my nutritionist card away.

This is all with the exception of a few salads that are more involved that I absolutely LOVE. I usually make these salads on a Sunday or Monday and eat them throughout the week at lunch when I am working.

Grilled Salmon

I love grilled salmon – done right, you have a nice crust on the outside and a soft, flaky inside. What I love most about it (aside from being delicious), is that it is quick, healthy, easy to make and really shakes up the weekly dinner routine.

Fish is something that can seem intimidating to make at home. First there is the buying process-Where to buy it from? What kind? Wild caught or farm raised? And then there is the actual cooking – what do you do to it once you get it home?

I actually like to think of fish as kinda easy – I think once it loses its home-cooked meal enigma status, you can enjoy the easy preparation and the quick cooking of it. Fish is also being sold in different ways that make it easier to make at home.

Grilled Vegetable and Pesto Quesadillas

 am about to unveil to you my most favorite recipe that I have blogged yet.

These beauties scream summer. This recipe takes advantage of your garden, your local farmers market or your in-season veggies (usually on sale) at the grocery store. Grilling these veggies brings out their incredible natural flavor and they are perfectly paired with the brightness of the basil pesto, the meltyness (if its not a word it should be) of the fresh mozzarella, and the occasional creamy tartness of the goat cheese. So good, I bet you eat them not once but twice next week.

Grilled Chicken 3 Ways

Nothing makes me hungrier then the smell of grill in the air in the summer. So when I get home in the evening and my neighbors have beat me to it and that incredible smell of grilled veggies and meat greats me in my driveway, I love to have something ready to go to throw on our grill as soon as I walk in the door.

That and the fact that my daughter has already asked me 152 times what we are having for dinner in the 5 minute drive since I picked her up from school.

So my go-to is chicken that I can start marinating the night before or the morning of. Most weeks in the summer we are making chicken one of these ways and eating for dinner for two nights and I'm probably having it for lunch one day as well.

White Bean Chicken Chili

So I don't know about anyone else in the Greensboro area, but the big snow storm was a bit underwhelming. All of the build up and anticipation, all the milk and bread buying, all of the news watching....and I can still see grass.

I do love it though when we have a snow event, even though it is usually fraught with unjustified chaos. It is fun and exciting and I gladly participate in the madness...to some extent anyway.

One of my favorite things to do when we are going to get "snowed in" is to make a big pot of white bean chili. It is one of Jeff's favorite things for me to do also, I think he would rank this recipe in his top 5 all time favorites of things I make. You know how you have some recipes that you have made enough that they just become part of you? You don't need a recipe, you may even make it kind of different every time because you don't measure. This is one of those recipes for me. So when I made it last night, I made sure you take note of some measurements so that I could share it with you all today.

When it’s this cold and blustery out, about all I can think about is soup. We have a go to chicken tortilla soup recipe for when its cold, for when we have a busy week, for when the day of the week ends in ‘y,’ what I’m saying is that we pretty much don’t need an excuse to make this. It is quick, it is easy, it is healthy.
