These beauties scream summer. This recipe takes advantage of your garden, your local farmers market or your in-season veggies (usually on sale) at the grocery store. Grilling these veggies brings out their incredible natural flavor and they are perfectly paired with the brightness of the basil pesto, the meltyness (if its not a word it should be) of the fresh mozzarella, and the occasional creamy tartness of the goat cheese. Healthy Snack for On The Go!

When I get hungry, things can get ugly. And what I mean by ugly is that I get pretty cranky and difficult to be around. Never does my sweet husband look more panicked or scared then when I innocently utter the words "I'm hungry." For example if we are in the car, his posture immediately changes, he sits up straighter, leans forward and grips the steering wheel tighter and asks… "is this like we need to pull over now hungry?"

Really Great Black Bean Soup Recipe

So the other night when we were doing some post Christmas returns/exchanges that took far far too long, I knew that I was going to need to whip up something quick for dinner for the fam. I remembered seeing a recipe for a black bean soup on my fellow dietitian-friend MaryRoss's blog that looked simple and good so I went for it. Now as it turns out, this soup wasn't just simple to put together and good, it was quick and really delicious, the whole family loved it! My Father In-Law, a soup connoisseur of sorts, had some of the leftover soup and has already put in a request for a second batch.
