So the other night when we were doing some post Christmas returns/exchanges that took far far too long, I knew that I was going to need to whip up something quick for dinner for the fam. I remembered seeing a recipe for a black bean soup on my fellow dietitian-friend MaryRoss's blog that looked simple and good so I went for it. Now as it turns out, this soup wasn't just simple to put together and good, it was quick and really delicious, the whole family loved it! My Father In-Law, a soup connoisseur of sorts, had some of the leftover soup and has already put in a request for a second batch. 

Broccoli is one of those tricky vegetables. Most of us can remember a time in our lives when our parents tried relentlessly to get us to eat broccoli. Many of us currently are parents that are trying relentlessly to get our kids to eat broccoli. My dad likes to tell the story of when my parents moved from their first home, the one that made it through my sisters and my early years, they moved a huge piece of furniture and found dried up pieces of broccoli and green beans behind it from my sister and I tossing them back there to avoid having to eat those offensive green things.
